Making your own pasta is not as difficult as you may imagine, and the end product is quite delicious, nothing like the dried stuff you probably buy in your neighborhood store. Next you adjust the pasta machine again, choosing the next lowest thickness setting, and pass the dough through 3 or 4 times. This operation is repeated until finally you have a long sheet of thin, smooth pasta. This is then cut to the desired length. Now the 2nd function of the pasta maker machine comes to the fore. All models have a cutting function to slice the pasta into strips. Simply pick the size you would like and run the sheets through the pasta cutter. That's it! Just leave the pasta to dry for an hour - a pasta drying rack will help with that part - and your delicious fresh pasta is ready.
